I ate a mopani worm, once. It was pretty horrible. It was dried and tough, and particularly the legs were difficult to chew. I was a bit disappointed, since I thought it looked quite enticing.
Anyway, I won't eat mopani worms again without thinking about it for a bit - maybe they can be slow-cooked in order to rehydrate them? With a bit of white wine to soften them up?
I must say, I always thought that the fat kind of flying ants (termites) looked very edible as well. The swallows go crazy about them, anyway.

According to Prof Holm, crickets are generalists and eat anything and everything. As a kid I was caught with one in my mouth. I will not repeat the exercise. Rather like shark meat, I guess.
